Taco Soup

Onion
4% Fat Ground Beef
Taco Seasoning (make sure it's protocol legal. I use one from Whole Foods)
Liquid Stevia
water

In small sauce pan simmer the onions until desired tenderness in 1.5 cups of water along with 1 dropper full of Stevia. In another small sauce pan brown ground beef once done, add taco seasoning (to taste) and 1-2 tablespoons of water. Simmer on low for 5-10 minutes or so. Add ground beef to onion mixture simmer together a bit and enjoy.

Whaaa Whoo bye bye to another 1.2 pounds this morning! I'm now back in the 120's! Well, 129.8 but it's the 120's and 9.8 away from goal!

P2 Meals To Travel With

Need to travel or have a quick meal ready to go...try these ideas. Feel free to add some of your own ideas.

Grissini Stix placed in a sandwich bag
Celery Stixs or bite sized pieces to make it "go further"
Cucumber Rounds
Apple Slices or Bite sized pieces to make them "go further"
Orange Wedges
Sliced Strawberries
P2 "Waldorf" salad
prebaked chicken breast
precooked shrimp

I've seen this recipe on the HcgDieters Yahoo Group it's Post #186062 if you want to check it out. It looks sssooooo good. I think it will hit the spot for something sweet/dessertish. I think I'm going to try it on Sunday or Monday!

P3/P4 Food Ideas

These where items that where suggested on the Yahoo group to eat when out of P2.

gluten free, sugar-free items, such as blueberry muffins, cheddar bacon muffins, fried cinnamon oopsies, regular oopsies: for grill cheddar/ham sandwiches or other sandwiches, mini pizzas and hamburger buns.

Strawberry Freeze

Allowed amount of Strawberries
Liquid Stevia to taste (or your preferred sweetner)
juice from 1/3 of lemon or to taste (optional I use rest of lemon to make a lemonade)

I usually double this and split the 2 servings into ramkins so I have 2 days of my fruit ready to go.

Using my majic bullet I place strawberries, stevia and squeeze in juice from lemon. Blend untill smooth. Pour into ramkins and freeze.

Add In Ideas:
Use flavored Stevia, or preferred sweetner
Use SF DaVinci Syrups to add other flavors such as Huckleberry in P3/P4
Add other berries in P3/P4

I am down .6 lbs today. That's a total of 4.6 pounds gone so far since back on VLCD's!

Hot Tea throughout the day

Today, I also made a lemonade using 20 ounces of water, 2/3 of a lemon and 1 dropper full of Stevia. Nice change of pace :0)

Apple...I used 1/3rd of my apple and 1/2 of my Celery serving to make Dizzy's Salad. I used Rice Vinager instead of Apple Cider. I also had to adjust the measurements since I am taste testing before I make a whole batch. I didn't use the mustard or Braggs since I don't have any.

P2 Salad w/Celery, Apple & Chicken

Dizzy's salad.
Chop up celery, 1 apple, and 1 diced, cooked chicken breast serving.
For a dressing add: 2 T. cider vinegar, 1 pkg. stevia, a little lemon juice, 1 t. dijon mustard (make sure no sugar in your mustard), and a little BRAGGS seasoning if you have it. Let it marinate a little this morning....YUMMY

P2 Baked Apple

Allowed amount of apple serving
water
cinnamon
Sweetner of choice (I use liquid stevia)

In a oven safe baking dish place cut up apple serving. Sprinkle liberaly with cinnamon. Stir in 1 cup water (or enough to cover apple slices). Add Sweetner of choice and stir well. Bake in oven or toaster oven at 325 for 20-30 minutes.

Grissini 8:30 am was hungry this morning. Then I realized I'd forgot my dose this morning so I took it at 8:45am
Baked Apple I split it into 3 servings as I was feeling "snacky"

P3 Saucy Chicken

I have not tried this recipe yet...looks good.

Saucy Chicken

1T Butter
1 lbs. boneless,skinless chicken breasts, cut into bite-size strips
8 oz. Cream Of Mushroom Soup (I will make mine from Linda Sue's website)
1/2 cup Shredded Cheddar Cheese
1/2 Cup Sour Cream
1/4 cup water
1 tsp. Italian Seasoning
2 green onions, sliced
12 oz. Asparagus

1. Melt butter in a large nonstickskillet. Add chicken and cook over medium-high until browned on all sides.
2. Stir together soup, cheese, sour cream, water, Italian seasoning and green onions; pour over chicken. Cover and cook over low heat for 10 minutes more.
3. Cut asparagus into 1-inch pieces and add to skillet. Cook until asparagus is hot.

P4 Idea, serve over pasta

Cheese Stixs P3

Cheese of Choice
Oil
Parmesan Cheese
1 Egg

Mix egg with 1/2 cup or so of water. Heat oil (enough to go 1/2 inch up sides of pan) in a med. to large saute pan on med/high to high. Cut your cheese into sticks, coat sticks with Egg wash then roll sticks in Parmesan Cheese. Fry cheese sticks in hot oil until done

Chicken & Onion w/Taco Seasoning (I will bake the chicken and then add it to my onions once they are cooked to desired tenderness)

Tomato Soup w/Shrimp

P3 Recipe Rotel Bake

Rotel Bake
2 lbs of ground beef,
1 pound of sausage (the breakfast kind that comes in a tube, make sure there is no sugar or startches.)
1 8oz block of cream cheese
1 can of rotel (which is diced tomatoes and green chili's I believe)
1 cup cheddar cheese (to top mixture with, Optional)
cook gr. beef and sausage until done. Drain meats and return to pan. While cooking meats place cream cheese and can of rotel in a sauce pan and heat until ingredients are mixed together and warm. Pour Cream Cheese/Rotel mixture over meat and stir until well combined. Top with Cheddar(optional) serve once cheddar is melted.

You can serve this by itself or top lettuce with mixture.

P4 Ideas,
top noodles with this mixture
use like a "sloppy joe" filling and top Oopsies or hamburger buns

My Holiday Interruption

During my Holiday Interruption I gained over my LDW. I had way to many Starbuck Carmel Light Fraps. I'm good with it as I know I will loose it now that I'm back in P2.

I have till Jan. 31st to loose the weight I gained on my interruption. I am also hoping I will make it to the goal I'd set for myself which is 120 lbs. I have to go into P3 so I will be in P4 in March for my birthday. So no more interruptions for me and no more Carmel Light Fraps...well at least until March when I'm in P4 :0)!

I will stay intentional! I will follow P&I 100% while on VLCD as I always have. I've only strayed off P3 while on my interruptions as there is no "official rules" during interruptions. 120 here I come LOL!

P2 Tomato Soup W/Cinnamon

I made my Tomato Soup Recipe today and added some Cinnamon to it. I must say YUMMY try it sometime :0)!
