P3 Mock Ice Cream
put strawberries and cream and some stevia in a blender and blend it up till smooth then put in the freezer (works better if you have an ice cream machine) and stir it every hour until solid makes a great P3 ice cream!

P3/P4 Cheesecake
Tracy at LCF shared these Cheesecake recipe ideas! I will try them when I get to P3. Warning: Some of the mix in ideas are not P3 unless you modify with SF items! I have suggested a few ideas
The funny thing about my cheesecake recipe is it is the exact same recipe as the CC Muffins. I use the Philadelphia Cream Cheese recipe that I got years ago.
2 8 oz cream cheese
1/2 cup sugar (use xylitol to make this P3 okay)
2 eggs
1 tsp vanilla
1 graham cracker crust (go crustless or make a nut type crust to make this P3 okay)
For caramel toffee, I use the little balls of caramel (or Russel Stovers SF Caramel balls for P3). If you can't find the little balls (chocolate chip size), I wil caramel ice cream topping (SF for P3). I use the heath bits of toffee (u can sub SF toffee pieces for P3). Sometimes I can't find just the plain toffe bits and have to use the ones that include the chocolate. I add 1/2 cup of each to the cheesecake. If using the ice cream topping, just add the toffee. Pour into crust and dollop the ice cream topping and then swirl. Bake in a 350 oven for 40 minutes. I used to wait until it was set, but I found lately that if I take them out at exactly 40 minutes they are done and really creamy.
For raspberry chocolate chip, I put in 1/2 cup chocolate chips (SF if P3). Pour into crust. Dollop on 100% fruit raspberry jam and swirl(SF jam if P3). Can use whatever flavor of jam that you want. Bake the same as above.
I've also used crushed candy cane for peppermint chocolate chip.
To make things not so sugary you can use the sugar-free chocolate chips. If you go with the caramel ice cream topping you could use sugar-free, but I have not tested that yet. To cut down on sugar that is why I use the 100% fruit jam too.
The possibilities are endless, I just need some new ideas for flavors.

P3 Almond Pound Cake

Classic Almond Flour Pound Cake
Ingredients:
· 1/2 cup butter (1 stick) softened at room temperature
· 1/2 cup full fat cream cheese
· 3/4 cup Splenda
· 5 large eggs, at room temperature
· 2 cups almond flour
· 1 teaspoon baking powder
· 1 teaspoon lemon extract
· 1 teaspoon vanilla extract
Cream butter, cream cheese and Splenda together, mixing well. Add eggs, one at a time, beating well after each. In a separate bowl, mix almond flour with baking powder. Add egg/butter mixture to flour a little at a time while beating. Add lemon and vanilla extracts.
Pour into greased 9"-10" Springform pan, bundt pan, ring pan, (or 9" round cake pan) and bake at 350°F for 50-55 minutes.
You can change flavors for this cake by using different extract flavors and even food color if you like!
Makes 12 servings. 6.1 net grams of carbohydrate per serving.

P3 Shortbread Cookie Dough
Thanks to Slim on LCG! I will be trying these in Jan. 2010 when I'm in P3
P3 - Shortbread Cookie Recipe
3/4 cup almond flour
1/4 cup Splenda
Pinch of salt
1/2 cup room temperature unsalted butter
Vanilla extract
I took some Macadamias and roughed chopped them and added it into dough
Sprinkle Cinnamon on top of the cookies after you cut them.
Preheat your oven to 350 degrees F.
Combine the almond flour, splenda and salt in a mixing bowl. Work in the butter with a fork or pastry cutter until the dough has the consistency of short crust. Pulsing in a food processor will work also.
Sprinkle a board or your counter top lightly with almond flour. Turn the dough onto the board and knead until it's smooth. Refrigerate the dough for a couple of hours or overnight.
You should have approximately 8 ounces of dough. Divide the dough into four equal portions for large cookies or eight equal portions for small cookies and shape into rounds.
Place each round on a parchment paper lined baking sheet and flatten them with the bottom of a glass to about 1/4 inch thickness. Prick with a fork. Bake at 350 degrees F. for 20 to 30 minutes, until the cookies begin to brown slightly. Allow the cookies to cool on the baking sheet.

Coconut Flour Chocolate Chip Cookies
I have not tried this recipe. I got it from HCG Dieters yahoo group and it sounded real yummy!
Coconut Flour Chocolate Chip Cookies
1/2 C coconut oil, melted (can use 1 stick butter)
1 C xylitol (or other sweetener)
6 eggs room temperature
1/2 t vanilla
1/8 t salt
1 1/2 cup flaked coconut (I used organic non-sweetened)
3/4 C sugar-free chocolate chips
3/4 C nuts
1 C sifted coconut flour
Mix together butter, sugar, eggs, vanilla, and salt. Stir in coconut, chocolate chips and flour. Drop (remember to shape instead if you want nice looking cookies) Drop batter in spoon size mounds 1 inch apart on greased cookie sheet. Bake at 375 degrees for 14-15 minutes. Cool slightly and remove from cookie sheet. Makes about 2 dozen.

I haven't tried these yet but will in P3 one day. This recipe came from a member of the HCG Dieters yahoo group.

Cherie's Pumpkin Cheesecake
Want to try this recipe heard it's really really good. So I copied it into my HCG file. Now I can't remember where I got this recipe from. If I find it I will direct you in it's direction. Sorry, I can't post that information now.

P3 Cream Cheese Danish
I have not tried this myself yet. I will once I'm in P3...maybe during my Christmas-New Year interruption. I got the idea from the LCF site in the bulletin boards Dr. Simeon's HCG December thread.
Now something really yummy is to make oopsies, but to flatten them before baking so they have a well in the center, then as they bake, whip up some cream cheese and egg just like a cheese cake recipe and when the oopsies are solid but not yet brown, remove them from the oven and scoop the cream cheese into the middle, and plop some sF jam on top of that. and pop them back into the oven for the rest of the oopsie cooking time. WOOT! Oopsie Danish!!!

This was my P3 Thanksgiving Menu 2009
I took an interruption per P&I for Thanksgiving and this was my menu:

Coconut Garlic Biscuits~www.tropical traditions (printed)*I think my baking powder was old because these came out very flat. Not bad tasting but I will be trying something else for a "biscuit" for Christmas
Avocado Deviled Eggs~Make your deviled eggs as normal (make sure your "Normal" is P3 compliant no sugar/no starch)then dice up an avocado and add to the filling mix...yummy 9printed)

Baked in individual ramkins and had this for breakfast and snack throughout the interruption.
